Salad 2 cups chopped escarole 1 cup chopped cooked chicken 1 small jicama, peeled, chopped (1 cup) 1 large papaya, peeled, seeded and chopped (1 cup) 1 large yellow or red bell pepper, chopped (1 cup) 2 tablespoons dry-roasted peanuts 1/4 cup chopped fresh cilantro
1. In tightly covered container, shake dressing ingredients. 2. In large bowl, place all salad ingredients except peanuts and cilantro. Pour dressing over salad; toss to coat. 3. Top with peanuts and cilantro.
