Monday, March 17, 2008 the Basics of Antioxidants

The terminology that describes what Antioxidants do is pretty exciting! Antioxidants are vitamins that fight "free radicals" which are the byproducts created when your body burns fuel. Vitamins C and E are some of the better-known antioxidants.

But before you go out and buy megadoses of these vitamins please know that more is not always better! Food has so many other nutrients and substances known as phytochemicals that protect against disease. In addition to a diet rich in antioxidants, or if you can't quite fit in all of your daily servings, you should try supplementing your diet with an antioxidant vitamin.

So eat a varied diet, including different sources of foods high in vitamin E and C and selenium. Enjoy at least five servings of fruits and vegetables, preferably those with deepest colors (orange, green and red). Good sources of vitamin C are citrus fruit, potatoes, strawberries, broccoli, and leafy green vegetables. Vitamin E is found in nuts, seeds, liver and leafy green vegetables. Selenium is abundant in seafood, liver, meat and grains. Many cereals are supplemented with vitamins and minerals as well. Also, you should regularly eat servings of blueberries, pomegranate, cranberry and grapes which have all been shown to contain high levels of various antioxidants.
